How our cakes are made
At Fiona Cairns Ltd, we never stint on fillings or icings. You will always find a generous amount of buttercream, or a good slathering of jam, in our hand baked sponges. Our cakes are hand decorated, and most of the decorations are also handmade in our bakery.The buttercream on our cupcakes and fairy cakes is piped by hand, before the cakes are liberally sprinkled with anything from gold dragees, miniature chocolate eggs or chocolate curls. All the final piping is applied by our highly skilled staff.
And if you choose a Fiona Cairns Ltd biscuit, it has been cut out by hand and the sugar mice, chocolate beans or ribbons upon it were applied by one of our lovely team, not by a machine.
Finally, our brandy-infused fruit cakes are matured for 2–4 weeks. We understand flavour and how to get it, and we know you appreciate our handmade, personal touch.
